Rediscovering Medjool Dates with Chef Jonathan Garnier

Back in October, La Guilde Culinaire invited me to attend an event on dates after its chef and owner Jonathan Garnier visited Natural Delights in California. I did not really know what to expect if not to taste a few desserts based on dates. Well Jonathan Garnier came back so inspired by the medjool dates that he decided to create a 7-course menu that would highlight the ingredient! [So glad I trained right before!]

This cool transparent paper goes in the oven and makes for a stylish presentation when it’s time to serve! More info on Carta Fata here.

The lamb was seared with Mycro cocoa butter and then finished in the oven. I had heard of Mycryo before but never seen it in action. It’s definitely going on my wish list as it seems perfect for cooking meat! More info here.

This is probably one of my top 5 desserts of all time! The chocolate sphere was filled with a chocolate mousse and ice cream. The ice cream was covered with sugar similar to pop rocks for a fun effect while eating. We had to pour the warm almond milk ourselves to open the sphere. Pretty cool eh!
